Well, it is now May 2, we are very close to our "drop dead" date. David has resigned! We joined the Porch Pirates for dinner and Bon Voyage. It was great! Still need to do more provisioning, a few odd ends to tie up, sewing a screen for the cockpit, Sailmail, cell phones, Satellite phone, etc. . . . but we are almost ready to go!

Susie's Provincial Pasta

½ to ¾ can pitted black olives, drained, sliced in half

2 4 oz cans of sliced mushrooms, drained

1 can quartered artichokes, drained

1 can chicken breast (or 2 to 3 fresh chicken breasts, diced and sautéed in olive oil)

1 can diced tomatoes or fresh plum tomatoes diced, drained

1 medium onion, diced

5-6 cloves fresh garlic, minced

1 jar Classico Cabernet Marinara sauce

Italian seasoning to taste

Pinch of basil leaves

Salt and pepper to taste

Saute onion, add garlic (do not allow to brown), add drained artichokes, mushrooms, diced tomatoes and olives. Add chicken (if canned, do not drain), add to pot. Simmer until liquid cooks down, add seasonings, and Classico sauce, simmer for another 15 minutes or so. Serve over cooked rice or pasta. Bon appétit!
